Today is a protein only day so probably a bit boring.
Breakfast- so far I had an omelet with one egg and 2 egg whites, 2 slices of turkey bacon in it, some of the home made ricotta that I made and some of the SF jalapeno jelly that I made. Boy do I love that stuff!! I made a hot cereal out of the oat bran but I hated it and can't eat it so I'll go in the kitchen and whip up something else using it. I'm thinking I'll make a big ol lemon muffin or something like that. Yup I made a modified version of my zucchini bread recipe and made it into lemon flavor. It wasn't bad. Needed more lemon flavor though so I adjusted the recipe to include more lemon extract. Those things are so filling!!!
YAYY finally got a workout in!! Well I got on the treadmill anyway! Pretty soon I'm going to have to start adding in the weights again and get up the nerve to bring out the ball again perhaps??!! At any rate, I'm proud of myself because I got on the treadmill and with about 8 minutes left to go I could feel a blister starting and my heel really hurting even though I put on band aids first. Typically I would have got off the treadmill and said ah well I was almost done, but instead I hopped off real fast, kicked off my shoes and got on that sucker bare foot and finished it out and then some!! :o) Yayyy me!! LOL!! Now it's after 2 and I need to hop in the shower and think about what's going to be for lunch and what I"m going to make everyone else for dinner!!
I didn't realize that I forgot to post lunch! I had a couple slices of the turkey loaf that was left in the fridge and a left over pork chop. Oh and one LCL cheese wedge.
Dinner was 2 swai fish fillets in a lemon, wine and butter sauce. I wish it would have been a veggie day because I would have loved to have some more cream of broccoli soup, but there's always tomorrow!
